Jam or chocolate filled sourdough rolls

I like to wake up in the morning to something nice to eat with my cup of coffee.
Sweet brioche breads are among my favourites.
There's something about them that says "home" when you make them.
The making process, waiting, baking, and when the fragrant, warm rolls lend in front you, you simply can't wait 'till they cool down. And you give them a bite, burning your lips and tongue with hot jam or chocolate hiding inside. But you don't care.
A sligtly more effort went into this recipe I created. I wanted to use my sourdough starter. It always pays in terms of flavour, but it takes a bit more patience then when baking with commercial yeast.
And my "baby" didn't disappoint me this time neither.

Chocolate or Jam Filled "Flauti" Sourdough Rolls

* 100 g buttermilk
* 30 g butter, softened
* 1 egg
* 50 g di sugar
* 250 g strong flour
* 75 g solid sourdough starter (with 50% hydration)

Scald the buttermilk then remove from heat and let cool down.
Put the lukewarm buttermilk into a mixing bowl, add the sourdough starter cut or torn into pieces.
Add the sugar and a couple spoonfulls of flour and stir.
Add the lightly beaten egg and half of the remaining flour, stir well.
Add the softened butter in three additions and make sure it's absorbed before adding more.
When all the butter's been absorbed well, add the remaining flour and sork the dough well, until smooth and elastic.
*The dough can easily be prepared by hand, or you can use your stand mixer with paddle attachment until you have added all the ingredients, and then switching to the hook and working the dough until it detaches from the sides of the bowl.
Cover the bowl and let the dough rest for 1/2 hour.
Transfer the dough to a slightly floured kneading board. Flatten it slightly with your hands and fold in threes (upper third towards the middle and the lower third over it, then fold from the right to the center and from the left to close it finaly and shape with your hands to form a ball).
Place the dough into the bowl, seal and let it proof until doubled in size (it's hard to say how long, it may take anywhere between 4 and 6 hours, but it will dipend a lot on the temperature and the force of your sourdough starter). So the only important criteria to follow is make sure the dough has doubled in size, don't rush it.

Once the dough has doubled in size, drop it on a slightly floured kneading board.
Flatten the dough with a rolling pin to approximately 1 cm thick, forming a rectangle. Mine had the shorter side 24 cm wide.
Cut the dough lenghtwise into three stripes.
Place the filling in the center (jam, chocolate cut into pieces or chocolate hazelnut spread; you may also leave them empty and fill once they are baked).
Fold the sides of each stripe towards the center and pinch to seal.
Flip the rolls so that the seal is facing down.
Place the three rolls on a baking sheet a few centimeters apart.

Cover with a piece of clingfilm (slightly sprayed with oil so it doesn't stick to the dough) and let the rolls proof for about an hour and a half or two (again depenting on the temperature, you shourld see the rolls nicely risen, soft and fluffy almost in surface.
Turn the oven on and preheat it to 220°C.
Just before putting the rolls into the oven, make paralel incisions using a saucer (not a knife).
Dissolve a teaspoon of powdered sugar in 2 to 3 TBspoons milk and use it to brush the rolls. First time just before putting them into the oven, and more time after 10-15 minutes of baking.
Put the baking sheet with rolls into the oven and immediately lower the heat to 200°C. Bake them for about 20 minutes or until nice golden brown.
Remove from the oven and let cool on a cooling rack.
Cut into smaller pieces and serve.
Store in zip lock bags to prevent from drying.
However, they can be frozen, too.

Maxi flauti (al cioccolato o confettura) a lievitazione naturale

* 100 g di latticello
* 30 g di burro, ammorbidito
* 1 uovo
* 50 g di zucchero
* 250 g di farina, W 330
* 75 g di lievito madre (al 50% di idratazione)

Scaldare il latticello sul fuoco fino a quasi farlo bollire. Lasciarlo intiepidire.
Versare il latticello intiepidito nella ciotola e sciogliervi il lievito madre spezzettato (il lievito va usato circa 4 ore dopo il rinfresco, quando è al massimo di fermentazione).
Aggiungere lo zucchero, un paio di cucchiai di farina (presa dal totale) e mescolare.
Unire l'uovo leggermente sbattuto e in seguito circa metà della farina.
Unire il burro morbido in tre volte incorporandolo bene.
Aggiungere la farina restante e impastare bene.
*Io ho fatto tutto a mano, ma si può fare tranquillamente con l'impastatrice usando la foglia al inizio e fino ad aggiungere tutti gli ingredienti, passando poi al gancio fino a far incordare l'impasto.
Lasciate riposare l'impasto per 30 minuti. Rovesciatelo poi sulla spianatoia leggermente infarinata e fate un giro di pieghe a tre.
Formate una palla e lasciate lievitare l'impasto in una ciotola coperta fino al raddoppio (trattandosi di lievitazione con il lievito madre la cosa importante e non guardare l'orologio ma il volume del impasto; il tempo varia molto in base alla temperatura del ambiente e la forza del vostro lievito, potrebbero servirvi tra le 6 e 8 ore, ma anche di meno/di più).
Una volta raddoppiato l'impasto, rovesciatelo sulla spianatoia leggermente infarinata e stendetelo con il mattarello allo spessore di circa 1 cm, formando un rettangolo con il lato più corto da 24 cm.
Tagliate l'impasto steso in tre strisce nel senso di lunghezza (ognuna larga 8 cm).
Potete decidere di preparare i flauti vuoti (e farcirli a piacere una volta cotti) oppure farcirli subito mettendo una striscia di marmellata al centro o cioccolato fondente.
Piegate i lembi verso il centro e pizzicateli per unirli.
Girate i rotolini così ottenuti con la chiusura verso il giù.
Sistemateli sulla placca da forno distanziati tra di loro.
Lasciate lievitare i rotolini coperti con la pellicola trasparente (unta con l'olio perché non attacchi) fino a raddoppiare.
Scaldate il forno a 220°C.
Prima di infornare i flauti, con un piattino (quelli da caffè) incidete la superficie senza andare troppo in profondità.
Mescolate 2-3 cucchiai di latte con un cucchiaino colmo di zucchero a velo e spennellate i flauti prima di infornarli e una seconda volta dopo 10-15 minuti di cottura.
Appena infornate i flauti, abbassate la temperatura a 200°C e cuoceteli per circa 20 minuti in tutto o finché dorati.
Una volta freddi, tagliateli e serviteli. Se li avete cotti vuoti potete farcirli a piacere con la marmellata o crema al cioccolato e nocciole.
Conservateli nei sacchetti di plastica o congelate quelli che avanzano. Per scongelarli potete usare il forno a microonde oppure scaldare il forno tradizionale a 180°C, spegnerlo e poi mettere i flauti dentro finché si scongelano,  controllando spesso, ci vorranno pochi minuti.

Maxi flaute (s čokoladom ili pekmezom), s kvasom

* 100 g mlaćenice (ili 50g običnog jogurta+50 g vode)
* 30 g maslaca, omekšalog
* 1 jaje
* 50 g šećera
* 250 g brašna za dizana tijesta
* 75 g kvasa (s 50%-tnom hidratacijom)

Zagrijte mlaćenicu skoro do vrenja pa je ostavite da se ohladi.
Uspite mlačnu mlaćenicu u zdjelu za miješenje i dodajte kvas nakidan na komadiće pa miješajte rukom da kvas omekša i razgradi se (kvas nahranite prethodno i koristite nakon 4 sata kad je na vrhuncu fermentacije).
Dodajte šećer i par žlica brašna (uzetih od ukupne količine). Izmiješajte.
Dodajte malo razmućeno jaje i otprilike polovicu preostalog brašna.
Izmiješajte, pa dodajte maslac u tri dodavanja.
Na kraju dodajte preostalo brašno i dobro izmijesite tijesto. Možete to napraviti ručno ili u stolnom mikseru (prvo koristite lopaticu dok ne dodate sve sastojke, a zatim prijeđite na kuku i mijesite dok tijesto nije dobro povezano i odvaja se od zdjele.
Stavite tijesto u zdjelu, pokrijte ga i ostavite da odmara 30 minuta. Nakon toga preklopite ga na troje (rastanjite tijesto rukama na malo pobrašnjenoj dasci. Preklpite prvo gornju a zatim i donju trećinu prema sredini, i isto tako s lijeva pa s desna prema sredini. Okrenite preklop prema dolje pa zaokružite tijesto rukama da dobijete loptu.
Smjestite tijesto ponovno u zdjelu i ostavite da se diže dok se obujam ne udvostruči (budući da se radi o tijestu s prirodnim kvasom, ne gledajte na sat već na obujam. Tijesto mora dobro ukvasati inače ćete dobiti jako loš rezultat kad je pečeno. Vrijeme dizanja je otprilike 6 do 8 sati, ali ovisit će puno o temperaturi u prostoriji i jačini kvasa, tako da će nekome trebati i kraće a nekome duže od toga).
Kad se tijesto udvostručilo, premjestite ga na lagano pobrašnjenu dasku i razvaljajte na oko 1 cm debljine, tako da dobijete pravokutnik kojem je kraća stranica duga 24 cm.
Izrežite tijesto po dužini na tri trake širine 8 cm.
Možete odlučiti ispeći tijesto prazno pa ga puniti po želji kad je pečeno, ili možete odmah nafilovati flaute tako što ćete na sredinu staviti pekmez (odaberite kvalitetan, gust pekmez koji neće ispariti ili iscuriti sav u pečenju), kremu od čokolade i lješnjaka (tj. nutellu ili sl.) ili komadiće tamne čokolade.
Preklopite rubove prema sredini i "štipajte" ih da se dobro spoje. Okrenite zatim rolnice tako da je spoj dolje. Smjestite ih na pleh razmaknute. Pokrijte ih prozirnom folijom koju ste namazali tankim slojem ulja da se ne zalijepi za tijesto.
Ostavite rolnice da se dižu opet oko 1,5 do 2 sata.
Pećnicu zagrijte na 220°C. U trenutku kad stavite peći peciva, smanjite temperaturu na 200°C.
Pomiješajte 2-3 žlice mlijeka s punom žličicom šećera u prahu pa uz pomoć kista premažite rolnice prije nego ih stavite peći i drugi put nakon 10-15 minuta pečenja.
Pecite flaute ukupno oko 20 minuta ili par minuta kraće ako vam pećnica jako peče. Važno je da ih ne prepečete jer će u suprotnom biti suhe.
Ostavite ih da se ohlade pa izrežite. Ako ste pekli prazne flaute, prerežite ih vodoravno i punite po želji.
Da bi ostali duže svježi, kad se ohlade spremite ih u plastične vrećice (jedan dan na sobnoj temperaturi) ili iz zamrznite. Možete ih odmrznuti u mikrovalnoj pećnici, kad vam se žuri, ali puno su bolji ako ih odmrznete u pećnici - zagrijte pećnicu na 180°C, zatim je ugasite i stavite flaute unutra, odmrznut će se za nekoliko minuta, provjeravajte često.
