Rosemary Sourdough Bread for World Bread Day

16th of October is celebrated each year as World Bread Day. The foodblogger Zorra has been promoting this event since 2006 and food bloggers from all over the world have been participating and contributing each year baking simple, complicated, small, big, special or ordinary bread for this occasion.
"The idea of World Bread is to honor our daily bread and be grateful that we have sufficient food. Not all of us are this lucky", says Zorra and I couldn't agree more.
I'm glad to be able to participate and contribute to this event one more time.

This beautiful loaf of sourdough bread, scented with rosemary, is delicious in any occasion, with a little butter in the morning, as a sandwich or to accompany a bowl of warm soup in the evening. The procedure is a bit long, but the result as always very satisfying.

Rosemary Sourdough Bread

* 200 g semolina flour (semola rimacinata)
* 300 g bread flour
* 200 g sourdough starter
* 300 g water
* 2 rosemary twigs
* 2 teaspoons salt
* 1 TBspoon extra virgin olive oil

Mix the semolina flour with 150 g water, cover and let rest for 30 minutes.
Put the sourdough starter (divided into small pieces) into a mixing bowl and add the remaining 150 g water. Let the starter soften in water for 10-15 minutes then dissolve it completely mixing it with a fork or by hand.
Put the bread flour and the dissolved sourdough starter into the bowl of a stand mixer and mix on low speed with a paddle attachment until the dough comes together. Add the semolina flour dough and continue mixing the dough until homogeneous.
Add the salt and continue mixing with a hook attachment for about 10 minutes.
Transfer the dough on a lightly floured kneading board and shape it into a ball.
Place the dough into a clean bowl and seal with a piece of plastic wrap. Let the dough proof for 3-4 hours.
Separate the rosemary leaves from the twig and chop them as finely as you can (I use a mezzaluna).
Mix the chopped rosemary with a tablespoon of extra virgin olive oil and leave in infusion while the dough is raising.
When the dough has doubled in size, add the olive oil with rosemary and knead well again by hand until the dough is smoooth again, and not only greasy on the outside.
Shape it again into a ball and place in a bowl (or other large enough container) with a lid. Close tightly and after 1/2 an hour place in the fridge. Leave the dough in the fridge over night.
The following day take the dough out of the fridge and leave for about 1 hour at room temperature, or a little bit longer if the room is cold.
Transfer the dough on a lightly floured kneading board and lightly flatten with your hands.
Fold the dough pulling the outside edges towards the center. When you have completed the round turn the dough with the seal facing down and place into the bowl again. Let it rest again for 1-2 hours.
Repeat the previous step and place the dough into a bread basked covered with a clean cotton cloth and generously sprinkled with semolina flour. Let the dough proof one more time for about 2 hours. To check if the dough is ready to be baked press it lightly with your index finger. If it feels stiff and you can hardly see any sign left, it is not ready. If a little fosset forms and then gradually disappeared it's ready.
Place a cast iron pot with a lit into the oven and turn it on to 250°C.
When both the oven and pot and really hot, take the pot out, put the bread in and cover with a lid. You may previously make a star shaped incision on top.
Bake the bread for about 25 minutes. Remove the lid and bake for about 15 more minutes or until the crust has achieved nice brown colour.
Remove the bread from the pot and place on a cooling rack, cover with a cotton cloth and try to resist and not cut it until is completely cold


Rosemary Sourdough Bread


Pane al rosmarino con LM

* 200 g semola di grano duro
* 300 g farina "0"
* 200 g lievito madre rinfrescato
* 300 g acqua
* 2 rametti di rosmarino
* 2 cucchiaini di sale
* 1 cucchiaio di olio extra vergine d'oliva

Mescolate la semola con 150 g di acqua, lasciate l'impasto coperto per 1/2 ora.
Spezzettate il lievito madre e mettetelo in una ciotola con 150 g di acqua, lasciatelo ammorbidire per 10-15 minuti poi mescolatelo con una forchetta o con la mano per farlo sciogliere completamente.
Mettete nella ciotola del mixer il LM sciolto e la farina "0", impastate con la foglia a bassa velocità.
Aggiungete l'impasto di semola e lasciate lavorare finché i due impasti non si siano amalgamati.
Unite il sale e continuate a impastare con il gancio per una decina di minuti.
Arrotondate l'impasto e lasciatelo lievitare nella ciotola per 3-4 ore.
Nel frattempo sminuzzate le foglioline di rosmarino e mescolatele con 1 cucchiaio di olio EVO.
Quando l'impasto ha raddoppiato il volume aggiungete l'olio con il rosmarino e impastate di nuovo, a mano, finché non diventi di nuovo liscio e l'olio sia ben assorbito.
Mettetelo in una ciotola con coperchio lasciatelo riposare 1/2 ora. Trasferitelo poi nel frigo per tutta la notte.
Il giorno dopo togliete l'impasto dal frigo e lasciatelo a temperatura ambiente per 1 ora o di più se la stanza non è abbastanza calda.
Trasferite l'impasto su una spianatoia infarinata e appiattitelo leggermente con le mani. 
Fate un giro di pieghe piegando i bordi esterni verso il centro. Quando avete completato il giro, rimettete l'impasto nella ciotola con il sigillo verso il basso e lasciatelo lievitare di nuovo per 1 ora o due. Ripetete questo giro di pieghe ancora una volta.
Coprite un cestino per il pane con un canovaccio pulito cospargendolo con la semola. Mettete l'impasto sopra e avvolgetelo nel canovaccio. Lasciatelo lievitare per circa 2 ore. Fate una prova per vedere se l'impasto è pronto per essere infornato: premetelo leggermente con un dito, se si crea una fossetta che scompare poi lentamente, l'impasto è pronto.
Scaldate una pentola con coperchio (meglio se di ghisa) a 250°C. Una volta calda, trasferitevi il pane precedentemente inciso con un coltello e fate cuocere nella pentola coperta per circa 25 minuti. Togliete il coperchio e continuate la cottura per altri 15 minuti o fino alla doratura desiderata.
Lasciatelo raffreddare su una grata e tagliate solo dopo che si è raffreddato completamente.
Se non avete una pentola adatta, cuocete il pane su una teglia nel forno riscaldato a 230°C per i primi 15-20 minuti e poi continuate la cottura a 200°C per altri 20 minuti.

Kruh s ružmarinom i kvasom

* 200 g brašna durum pšenice (semola rimacinata/ semolina flour)
* 300 g bijelog pšeničnog brašna
* 200 g zrelog i osvježenog kvasa/kiselog tijesta
* 300 g vode
* 2 grančice svježeg ružmarina
* 2 žličice soli
* 1 žlica maslinovog ulja

Brašno durum pšenice (semolu) pomiješajte sa 150 g vode, pokrijte i ostavite da odstoji 1/2 sata.
Nakidajte kvas na komadiće i stavite ga u zdjelu.
Prelijte kvas malo umlačenom preostalom vodom (150 g) i ostavite da odmekne 10-15 minuta.
Zatim ga razmutite rukom ili vilicom da se potpuno rastopi u vodi.
U zdjelu stolnog miksera stavite razmućeni kvas i bijelo pšenično brašno, uključite mikser s nastavkom K za tijesta, miješajte na niskoj brzini dok se smjesa ne poveže, a zatim dodajte tijesto od durum brašna i nastaviti mijesiti dok se dva tijesta ne povežu.
Dodajte sol i nastavite mijesiti kukastim nastavkom za tijesto 10-ak minuta.
Zaokružite tijesto rukama i stavite u zdjelu, pokrijte i ostavite na toplom da se diže 3-4 sata.
Odvojite listiće ružmarina s grančice i nasjeckajte ih što sitnije.
Pomiješajte ružmarin sa žlicom maslinovog ulja i ostavite u infuziji dok se diže tijesto za kruh.
Kad se tijesto za kruh udvostručilo, premijesite ga dodajući ulje s ružmarinom.
Mijesite koliko je potrebno da tijesto upije ulje i postane opet glatko, a ne samo masno izvana.
Zaokružite ga rukama i stavite u zdjelu s poklopcem.
Nakon 1/2 sata premjestite tijesto u hladnjak i ostavite ga da se diže polagano cijelu noć.
Sljedećeg jutra tijesto izvadite iz hladnjaka i ostavite 1 sat na sobnoj temperaturi (ili malo duže ako je prostorija hladna).
Zatim ga istresite na pobrašnjenu dasku, malo ga rastanjite rukama pritišćući nježno da ne istisnete sav zrak.
Preklapajte tijesto povlačeći rubove prema sredini. Kad ste napravili cijeli krug, okrenite tijesto tako da je preklop prema dolje, stavite ponovno u zdjelu i poklopite. Ostavite da se diže opet 1-2 sata.
Ponovite preklapanje kao u prethodnom koraku i stavite tijesto na čistu kuhinjsku krpu obilno posutu semolom ili oštrim brašnom, pospite kruh obilno brašnom i odgore, zatvorite ga u krpu i ostavite na toplom da se diže opet oko 2 sata - kad pritisnete tijesto prstom mora se napraviti jamica koja polako nestane, tad je kruh spreman za pečenje.
Zagrijte posudu s poklopcem na 250°C.
Kad je posuda jako zagrijana prebacite kruh u nju (prethodno zarežite kruh na površini sa šest ureza poput zvijezde), poklopite i pecite oko 25 minuta.
Otklopite posudu i pecite još 15-ak minuta dok kruh ne dobije lijepu boju.
Izvadite ga iz posude i stavite na rešetku da se ohladi pokriven čistom krpom.
Režite kruh tek kad je potpuno hladan.
Možete kruh peći i na običnom plehu, samo pecite prvih 15-20 minuta na 230°C, a zatim smanjite temperaturu na 200°C i pecite još 20 minuta.
